To prepare the Sicilian Carnival pasta it is necessary to make the right sauce, which in our case is the already mentioned pork sauce allacatenase.
Catania-style carnival sauce
Ingredients
- 300 g of diced pork
- 300 g of pork sausage
- 200 g of pork tenderloins
- 1 liter of tomato puree
- 2 heaping tablespoons tomato paste
- onion, carrot and celery
- 2 bay leaves
- ½ glass of red wine
- salt and pepper
- extra virgin olive oil to taste
Preparation
In a separate pan, brown the pork tenderloins and pieces of pork in a little oil. Chop carrot, onion and celery to make the sauté. In a pan, brown what you have obtained with the oil and the clove of garlic. Add the browned pieces of meat and deglaze with the red wine. Once the alcohol has evaporated, add the concentrate and the tomato puree and about half a liter of water. Add the bay leaf, season with salt and pepper and cook over a very low heat with the lid on for two hours. After about an hour of cooking, add the sausage. Once the right density is reached, the sauce will be ready. Eliminate the garlic and bay leaf.
